Stephanie Smith, also known as the “300 Sandwiches Girl,” has just been engaged to her boyfriend, Eric Schulte.
In 2012, Smith found out what it would take her boyfriend to pop the question and give her a ring. The first time she made a sandwich for Schulte, he said “You’re, like, 300 sandwiches away from an engagement ring.” The first sandwich she made was turkey on whole wheat, with Swiss cheese, lettuce, and mustard.
She then started a blog, 300 Sandwiches , to document every sandwich she would prepare for her boyfriend.
On May 20, Smith posted on her blog that Schulte had already proposed to her. She has only served him 256 sandwiches, and the proposal took place in Barbados. Maybe it was the sandwich that propelled Schulte to propose ahead of schedule. The sandwich was called “Kite Surf Fuel,” and was made with arepas, cheddar cheese, sautéed tomatoes, onions, and scrambled eggs.

She also said that she was shocked that the proposal came while she was preparing to make the 257 th sandwich on her 300 sandwiches challenge.
The couple, together with four of their closest friends, spent last week in Barbados. Smith had already told Schulte that sandwich No. 257 was going to be served for dinner. But even before serving the 257 th sandwich, Schulte was ready to pop the question.
He pulled her towards the pool deck, where hundreds of flower petals were scattered forming a big heart, and paper lanterns illuminated the pool. The sun was setting, Schulte got down on one knee, reached for a clam shell and opened it in front of Smith. Inside was a diamond ring. Sandwich No. 257 became the first meal Smith made for her new fiancée.
Almost 2 years after the first sandwich, and 43 sandwiches short of the 300 challenge, the couple are engaged. Neither of them was willing to wait until sandwich No. 300 was served.
After the proposal, Smith wrote on her 300 Sandwiches blog and said, “Words cannot express how extraordinarily happy I am. Not because I have a (sic) engagement ring, but because I’m going to spend the rest of my life having ridiculously amazing adventures with my soul mate.”
On Twitter, a user asked Schulte, also known as Mr. 300 Sandwiches, if his fiancé will be making the rest of the sandwiches. Schulte responded by saying, “I’m making sure of it.”
